Fish

All our fish comes from sustainable sources as certified by the Marine Stewardship Council.  We only buy fish that are line caught or supplied by day boats - or that have been organically farmed. We do not buy trawlered fish because of the devastation this causes to the sea bed, as well as depleting food stocks by catching unwanted fish.

We buy salmon from the Loch Duart hatcheries who are pioneering the use of fallow farming in their lochs, with each loch left fallow for one year in every three to allow natural cleaning and regeneration of the waters.
